Bosio Passato Barbera d’Asti Superiore, Piemonte, Italy

Half the grapes are harvested as normal and placed as whole bunches onto racks in a drying room for 20 days, while the other half remain on the vines continuing to ripen. Once the late harvest is completed, the two halves come together for 20 days maceration in indigenous yeasts, before ageing in a combination of large French tonneaux and Slavonian oak casks for two years.

The result in an intense, opaque, dark red wine, high in colour, tannins and alcohol. Damson, prune and fruitcake aromas hit you first, layers of dark fruit, spice and wild herbs, with some sweeter notes of vanilla and burnt toffee. The palate is thick and fruit-laden, its big structure tempered by sweet dried fruits and dark chocolate tannins, smooth and polished with a cleansing tang of tart blackcurrants.

Bedoba Saperavi, Kakheti, Georgia

Made from the indigenous grape variety Saperavi and partially vinified in traditional qvevri vessels, Bedoba means `Day of Luck’. The final cuvee is a blend of 50% Saperavi matured in stainless-steel, 25% in 5000 litre wooden vats, 18% in second and third 225 litre American oak barrels and 7% Qvevri.

This wine is dark purple in colour. The nose opens with a powerful savoury-spicy bouquet of blackberries, herbs, flowers and black pepper. The palate has a creamy, juicy texture, ripe tannins and black fruit flavours.

A really lovely white blend from Custoza, south east of Lake Garda. There’s a lot going on here with notes of white flowers, tea leaves, apple, pear, citrus, peach, apricot, tropical fruit and ginger. There’s a slightly oily texture to the honeyed palate and the finish is long.

Trarbacher Huhnerberg Riesling Kabinett trocken 2010 Martin Mullen, Mosel, Germany

Martin Mullen considers the Huhnerberg wineyard the best of his wineyards. The wineyard has been abandoned and forested before Martin acquired an area of approximately 2.5 hectares from it in the early 2000s.  Some of the vines are very old and still ungrafted, the soil is a mixture of blue and brown slate. The harvest is small, but the wines are really concentrated and tasty. The 2010 Hühnerberg Kabinett impresses with its highly diverse aroma.  With peach, redcurrant and elderberry. Honey, floral aromas and a pleasant smokiness strengthen the body. The wine tastes fruity and fresh. Like the scent, it also has a very complex palette of flavors. A fantastic Riesling with lots of character and a great taste of the Hühnerberg terroir. Residual sugar 4.5 g/l, acids 10.3 g/l.

Harvesting takes place by hand in the second half of September. The noblest part of the juice pressed from ripe grapes is used for this "overnight" wine. Dessert Wine

Ainoa Sametti Blueberry Dessert Wine

Strong and rich, with an almost port-like character, Sametti is perfect when you want to sip something warming after a meal or when talking with friends. It can be served with berry desserts, chocolate cake or with creamy cheeses like Camembert.

Sametti starts in the Finnish forests, where wild blueberries (bilberries) ripen in the long summer days of July. They are then picked at the peak of flavor.  That is saying something; the small wild blueberries are packed with far more flavor than the larger, cultivated blueberries.

But even so, it is not easy to turn them into wine.  Blueberries are a difficult fruit to ferment.  Using a typical “fruit wine” method the wine will often turn out thin and with little flavor. We overcome those issues with a proprietary process that includes the use of different sugars and a method that coaxes the yeast to perform well.

The bulk of the fermentation happens on the berries, extracting tannins, flavonoids and very rich color elements from the skins. It is then pressed off the solids and aged in tanks for six months before being bottled.

Ainoa Valokki Cloudberry Dessert Wine

There is no fruit that better expresses the unique spirit of Lapland than cloudberries, and Valokki captures that brilliantly in a wine. An amazingly versatile wine, Valokki complements salty foods like liver pate and cheese, spicy foods, or a wide range of desserts.

Grapes are the only fruit that naturally contains every element needed to produce great wine when they are picked, but cloudberries are surprisingly close. We need to compensate for the lower-than-ideal sugar content, but we can then ferment and process Valokki very similar to how a grape wine is done. By using a high concentration of cloudberries per liter, Valokki achieves a stronger and richer cloudberry flavor than other wines or liquors.

After fermentation is complete, the wine is aged in tanks for four months before being filtered and bottled.

Ainoa Vaapukka Raspberry Dessert Wine

To sip after a meal or with a dessert. Very rich, with a tartness from the berries that balances the sugars and cuts through sweetness in the mouth. Pairs wonderfully with creamy desserts like pannacotta or cheesecake - and also with chocolate.

Most berry wines are diluted with a high percentage of water. Not Vaapukka where the majority of the liquid volume is pressed from the berries themselves. Fermented cool to create a rich, concentrated flavor and preserve the fresh aroma of the raspberries.

The wine is then pressed off the solids, and aged in tanks for at least four months before being filtered and bottled.
